Winemaking
/maturing

Destalking then fermentation in open wooden vats for 15–20 days. Maturing in wooden "barriques” or "demi-muids”, duration roughly 18 months.

Tasting :
Colour : Crimson with slightly bluish glints

Nose : Sound and generous. Hints of peppercorn and liquorice, blackcurrant and black olives

Palate : Ample and dense. The fleshy tannins offer a structured palate that also manages to yield a juicy, delicate fruitiness. A wine for laying down and for gastronomy

Goes with : While still young, this wine will bring the best out of wild boar in sauce, or reveal the textures of a Charolaise entrecote cooked with bone marrow

As the wine ages, it enjoys the company of a Tournedos Rossini or a dish of roast quail with forest mushrooms, or perhaps a thick-cut pot roast veal chop served with creamed mushrooms

Laying down :
2–10 years. Best decantered on opening
