Vinification / Ageing :
Gentle extraction of juice (pneumatic press).
Fermentation and ageing in wooden or stainless steel barrels for around 12 months.
Bottling takes place on the estate.
Ageing potential :
Best drunk between 3 and 10 years. Serve between 10 and 12 °C.
