All parcels are separately matured (oak barrels orconcrete vats for 15 days) : then 50 % are aged innew oak barrels and 50 % in half-muids or oak barrels that already contained wine. Duration: about 18 months).

Wine tasting :
Color : Deep red, violet and sparkling tone

Nose : Powerful, fruity and spicy. Notes of blackcurrant and blackberry, of spices and grilled almonds

Mouth : Rich and full-bodied. Tasting reveal denseand tight tannins of a great delicacy. The fruity hintsand the exquisite oaky character reveal a pure and accurate balance. This wine will gain in complexity and fineness when kept a few years in the wine cellar

Good with : Young, this wine will be appreciated with plates of character such as an « Emincé de volaille à la catalane (with sweet pepper, tomatoes and spices), marinated Beef kebab with grilled vegetables or with a creamy Blue cheese like "Bleudes Causses”. Older, this wine will be appreciated with braised plates like "Daubes”, "Boeuf bourguignon” or "Lièvre à la Royale” (Foie gras and truffle). With an Italian cheese such as "Pecorino à la truffe)
