Palate : The palate is slender and subtle marked by blackcurrant, blueberry and blackberry aromas. The freshness is provided by mineral notes (graphite). The mid-palate is slender and fresh. The tannins are present and structuring. Great depth in this wine
Good with : This wine requires a cuisine of taste and character : Roasted pigeon on the chest, roasted asparagus tips and reduced juice. Herb-crusted beef fillets, baby potatoes and garlic "en chemise”. Cheese with character and taste like Epoisse, Salers or even an old Mimolette |
