Winemaking / maturing:
Destalking on 70 % of the production. Fermentation in opened wooden vats (15 to 20 days). Ageing of 1 to 2 wines in barrels or half muids (duration of about 15 months)

Wine tasting :
Color : A nice crimson colour of a beautiful intensity with purple reflections

Nose : The nose is open and expressive with a beautiful delicacy. Deep in structure, it reveals subtle roasting aromas as well as kirsch notes and a slightly smoky hint

Palate: The palate is soft and delicate at the beginning. It then reveals a straightness and a slender character. The tannins are dense and offer a great depth. The finish is fresh and durable

Good with: This wine requires a cuisine of taste and character. Pairing examples :
• Double rib steak à la bordelaise, candied shallots, « râpée » de pomme de terre,
• Squab roasted on the trunk, reduced juice, mashed sweet potatoes,
• Old mimolette or truffled Brillat-Savarin
