Color : Purple with ruby highlights. The drops are long and persistent, bright and clear
Nose : The nose reveals some aromas of black fruit like ripe blackcurrant or like spices, a few rocky notes, notes of stone, of wet pebble, a mineral feeling
Mouth: Clear and neat. The velvety tannins are coated with a dense ans silky substance. The wine is very long and lets a saline feeling while tasting
Good with: Food pairing : the character of this wine requires beautiful elegant cookings carefully prepared and simmered : Roasted Veal filet mignon served with porcini mushrooms "sautés” in butter, larded and grilled tuna tournedos on the barbecue, served with some candied eggplant , pan of Veal kidneys served rosé and deglazed with a good raspberry vinegar, some early turnips in the juice, old Mimolette or Pyrénées sheep cheese (Tomme de brebis des Pyrénées)
