Winemaking / maturing:
Destalking on part of the production. Fermentation in vats (15 to 20 days). Ageing of 1 to 2 wines in barrels or half muids (duration of about 18 months)

Wine tasting :
Colour : Very intense purple colour with a few purple tints

Nose : The nose is generous and concentrated, marked by aromas of jammy black fruit, hints of spices and a touch of graphite (pencil lead)

Palate : The palate is slender and subtle marked by blackcurrant, blueberry and blackberry aromas. The freshness is provided by mineral notes (graphite). The mid-palate is slender and fresh. The tannins are present and structuring. Great depth in this wine

Good with : This wine requires a cuisine of taste and character : Roasted pigeon on the chest, roasted asparagus tips and reduced juice. Herb-crusted beef fillets, baby potatoes and garlic "en chemise”. Cheese with character and taste like Epoisse, Salers or even an old Mimolette
Laying down :
This wine can be drunk now if it is opened a few minutes before serving and possibly in a carafe. It can also be kept for a good ten years
